A warm bowl of fresh peaches, toasty cinnamon, hearty quinoa and a splash of almond milk is one of my favorite opening volleys for the day. It’s as delicious as it sounds plus it’s low fat, around 150 calories and has practically all the nutrition you need to jet propel yourself through the morning. And thanks to fresh peach season it’s around $.80 a serving HKUE DSE!

Peach Breakfast Quinoa [Pin It] You know I like to get the most out of my flavors so I pan-seared the peaches in a nonstick skillet for a few minutes before cooking them with the quinoa. That got their little juices flowing and brought their natural sugars to the surface to caramelize and intensify the peachy flavor. I also toasted a good dollop of cinnamon and a pinch of nutmeg along with the quinoa to give the deliciousness that extra dimension, but it’s worth toasting cinnamon for the scent alone. It makes the kitchen smell like Fresh Cinnamon Palace.

Peach Breakfast Quinoa [Pin It] I know I’m always rabbiting on about this, but I love it so much I just have to: take half an hour to cook up some breakfast quinoa and you have cheap, nutritious, delightful-on-every level breakfasts all week. Just pop a serving into the microwave and you’re rearin’ to go. Some mornings I’m either multitasking too hard or just not awake enough to bother with extra almond milk, but it’s just as good without it investment immigration.

Peach Breakfast Quinoa [Pin It] This is how the costs break down: the big expense is the quinoa at about $2.25. The peaches were only $1.00/lb, totally sweet, and the almond milk runs $1.10 for 2 1/2 cups. Two tablespoons of agave cost about $.25, and I’ll allow a very generous $.20 for the cinnamon and nutmeg. Pretty frugal for a week’s worth of delicious, healthy breakfasting Ring Coffee Mill!
