Damnit!! I need a new computer. Something fierce. Just sitting here typing away about miso and *shooof. <—- That’s my sound for a computer killing itself. And by killing itself, I mean it completely shuts itself off and you lose everything you have been doing. Yes, I am a saver, but when writing I try to just write/type and save at points where my brain moves to the next topic. That way I can just keep the flow going. But of course, in this case my brain had yet to move to the next topic and I lost my entire post. All I wanted to do was tell you about miso.

The funny thing when you lose your work, is no matter how fantastic or utterly crappy it was, it was the greatest thing you’ve ever done. And the world just crapped on your life and your amazing piece of work. In reality, it wasn’t that fantastic… probably… hopefully…

I did text Logan to let him know of my computers favorite new thing to do, as I do every time my computer kills itself. As if him knowing what a piece of crud it is will make any difference. And yes, the text also included the flaming red faced emoji. Although I don’t feel that emoji even does my red face justice.

And on that note, I am going to go and hit save…

I saw those family-sized bakewell tarts on offer at the shop a couple of weeks ago and despite only being in there to pick up a bottle of water, I came out with TWO of those icing-covered, jammy pastries-from-heaven. Eaten before the day was out, they were definitely a contributing factor to me joining Slimming World!
I’m not even sure if Mr Kipling exists. Probably not. He’s probably just some high-tech computer sat in the corner of a cake-filled test kitchen, analysing probability statistics for flavours that are likely to induce catastrophic will-power failure in people like me.
My son Lewis asked me to make some granola bars for him to take to school. I’d usually go for my blueberry-Greek-yogurt version, but I was dreaming of bakewell tarts at the time, and that led me to this creation.
These easy no-bake granola bars come together in minutes and the almond-y berry bakewell flavour is so addictive!I’m not going to lie here – this is no slimming-world-friendly recipe. I made these for the kids (and only had a small nibble off a couple of corners). They do contain honey and sugar for sweetness, but they also contain lots of goodness like oats, berries, almonds and coconut oil. My kids loved them .

  

To all of you non-UK folk out there – have you ever heard of a Bakewell tart?
Living in the UK (in fact i’m only about 30 miles from the town of Bakewell) I’m lucky enough to get my fair share of Bakewell tart.

I’ve heard that you can’t get it in the USA! Oh my goodness! If I was ever going to emigrate, forget the English teabags and sausage rolls – my suitcase would be full of Bakewell tarts. Deliciously moist blondies with all the those Cherry Bakewell flavours PLUS white chocolate!

They consist of a pastry base, a layer of cherry or raspberry jam and a topping of almond frangipane and flaked almonds. If you ever visit the UK you’ve got to try one.

If you don’t manage a visit to the UK, then bake these blondies instead!

Full of almond and cherry flavour, they really are reminiscent of Bakewell tart – but with the added bonus of fat, juicy cherries and chunks of white chocolate too.

They’re moist, and very moreish. One slice definitely isn’t enough!  

As for my connection with Silvia, macrobiotic chef, mother of two little people and the blogger behind the gorgeous Salvia + Limone, well, that's a different story all together. But suffice to say, I kinda sorta stalked her at the Food Blogger Connection Conference back in the summer of 2015, having discovered her blog just days before then. Though it must be said we didn't discuss a collaboration at that point at all; in fact our encounter was rather brief. Nonetheless, over time I have become more and more inspired by her work, so much so that I had to use her words as an opening to this blog post because they captured my sentiments so perfectly. Thereafter another meeting became almost inevitable and, killing two birds with one stone, I ended up inviting both Silvia and Aimee to my 'studio' on the same day. A stroke of genius, if I may say so myself :) ;)
So what you see here, is what happens when 3 women get together, not to compare and contrast, outshine or undermine one another, but to work as one, respecting each other's different perspective, expertise and ideas. I cannot stress strongly enough how utterly empowering this experience was - exhausting and exhilarating in equal measures - but so, so wonderful nonetheless. And though, as I write these words late on Sunday evening, our day together has long since come and gone, I still feel slightly elated, especially considering that there was TONS of planning that went into this blog post all of which took place well before we even got together. Frantic DMs on instagram, secret pin boards on pinterest and a couple of e-mails back and forth too. I even have a little blister on my index finger from all the DMs I wrote on instagram, getting over excited as the cake started to take shape in our minds. :) And then to see that these images here are the result of all our hard work - so satisfying joyetech cubis:).

Chicken, Goat Cheese, and Black Olive Muffins. Sounds good, right? What if I told you they were also wheat-free, gluten-free, and low carb? Would you still be interested?

You guys know that I’m not a low-carber but that doesn’t mean that I shy away from low-carb recipes. When it comes to food blogs, I don’t discriminate! One of my favorite food blogs is Kalyn’s Kitchen and the majority of her recipes are South Beach Diet friendly. I don’t follow the South Beach Diet but I love Kalyn’s recipes because they are both healthy and delicious with an emphasis on whole, unprocessed foods hong thai travel.

One of Kalyn’s recent posts was about Egg Muffins. No, not Egg McMuffins! These are much healthier and much tastier than anything off the McDonald’s breakfast menu.

Kalyn’s Egg Muffins are basically a portable omelet that can be eaten on the run. The recipe is simple: whip up some eggs with whatever veggies, cheese, meats, herbs and spices you have on hand, pour the batter into some muffin cups and bake. Kalyn has an actual recipe for you to follow but I found it was easy to improvise. I whipped up my own creation with chicken, goat cheese, black olives and fresh chopped parsley and they turned out perfectly on the first try hong thai travel.

When I made my egg muffins, I used silicone muffin cups that I had recently received as a gift. They worked really well! But Kalyn says you can also use a regular muffin tin if you line it with foil baking cups. The cool thing about these ‘muffins’ is that you can refrigerate or freeze them and pop a couple in the microwave on your way out the door.

Since I suffer from hypoglycemia, it is important for me to start the day with some protein. I’m not always very good at forcing myself to eat breakfast but it’s much easier when I have something like this on hand. In fact, one of these egg muffins along with one of my whole wheat muffins is a pretty good combination to get me through the morning hong thai travel.
